Yield: About 4 cups

This recipe is for a whole almond milk. It isn’t the normal almond “skim” milk that you find everywhere else. Since it goes into smoothies, I just leave all the almond in the milk instead of strain it out.

Ingredients:

1 cup raw almonds
4 cups filtered water

Preparation:

The Night Before

Soak the almonds in filtered water in a glass container at room temperature overnight.

Making the Milk

Strain and rinse the almonds. Fill a high powered blender (Blentec is what I use) with 4 cups of filtered water. Add the almonds. Blend at a high speed for about a minute. Store the milk in the fridge as use within a week.
