Slow-Cooker Braised Pork Belly and Greens

This delicious meal is extremely versatile and takes very little time to prep. Start with a nice fatty cut of pork, throw in whatever braising greens you like, add an onion, soak with apple cider (sweet or alcoholic) or meat stock, and season to your liking. You can even start with a bag of frozen mixed braising greens and one of frozen pearl onions. I like to also add a tsp of fennel seeds and a half tsp of celery seed. My serving also received a healthy drizzle of sweet chili sauce.
2 lbs Pork Belly (or Pork Side Meat)
1 lb of Braising Greens
1 large Onion, chopped
2-4 cups of Apple Cider or Meat Stock of choice
Salt and Pepper to taste
Any other seasonings you like
Place the prepared braising greens in the bottom of a slow-cooker. Score the fatty side of the pork belly and place on top of the greens. Sprinkle with salt, pepper, and any other seasonings you like. Spread chopped onion on top of pork. Pour the apple cider or stock over top of everything. Cover and refrigerate overnight to marinate.
Cook on Low for 8-10 hours. Taste and adjust seasoning if needed. Enjoy!
