Yield: About 10 pancakes

These simple, delicious, grain-free pancakes are a perfect replacement for the standard pancake.


2 ripe bananas
4 whole eggs
1/2 tsp cinnamon
1/4 tsp ground ginger
Dash of nutmeg
Pinch of salt
1/2 tsp vanilla extract


Mash the bananas in a bowl, whisk in the eggs and remaining ingredients. Heat a pan on low to medium heat and coat with a little coconut oil or ghee. Scoop batter into pan. Cook until lightly browned, flip, and cook till lightly browned on second side. Serve with fresh berries or a drizzle of maple syrup.
